Tamarisk with plant based feta cheese ,crushed almonds and lemon sauce

Greek comfort food from the early ages of our childhood. When ”yiayia” (grandmother) used to have chorta with lemon and olive oil in our table very often in summer time! This is the same concept with a small twist!

Ingredients

  • 500 g tamarisk (or any other ''chorta'' will do)
  • 100 g plant based cheese
  • 30 g almonds
  • salt and pepper
  • lemon sauce

Instructions

Clean the tamarisk from big stems and wash well.

Place a big pot with plenty of water with salt to boil. When it boils, blance tamarisk for 2-3 minutes and then place in a bowl of water with ice to stop it from overcooking.

Serve tamarisk in a plate with pieces of plant based white cheese like feta, drizzle with lemon sauce and sprinkle some of the crushed almond on top.
