Right in the middle of autumn the dominant vegetable is pumpkin.
This amazing vegetable is suitable for soups, desserts and also to use it for making pasta. This remake of an Italian dish captures all the flavors of the season making it a comfortable and satisfying meal. Chef or home cook try his one and feel all the warmth and richness of this plate.
Pumpkin gnocchi with feta sauce
Ingredients
- For the dough:
- 300 g all purpose flour
- 300 g baked pumpkin
- salt & pepper
- For the feta sauce:
- 300 g vegan feta cheese
- 1 large onion
- thyme
- salt and pepper
- ½ cup white wine
- 1 cup soya milk, no sugar
Instructions
For the dough: Preheat the oven to 200oC.
Lay in a tray a non stick paper and place the pumpkin pieces.
Bake for 20 minutes until soft.
Leave to cool down and puree them.
In bowl mix the pumpkin puree, salt, pepper and flour and mix until a smooth dough.
Cut in small balls of 20 g each and shape in any form you like (we did it in pumpkin form because we love pumpkins).
Boil them for 10 minutes in salted water. A trick to know when it is done, you will see the gnocchi rising to the surface of the water.
For the feta sauce: In a pan with a little bit oil sauté the onions, until golden and pour over the wine.
Reduce for a little bit and pour inside the milk and add the vegan cheese.
Correct with salt and pepper if needed and put a little thyme inside the sauce.
Optional you can blend the sauce until smooth.
Serve.
