Vegetable patties

A healthy outside starts from the inside that’s why these homemade veggie patties are a delicious and wholesome way to nourish yourself from a variety of vegetables all in one bite.

Ingredients

  • 1 broccoli (2 cups)
  • 1 red pepper
  • 1-2 carrots
  • 1 onion
  • 2 green onions
  • ½ cup peas
  • ½ cup corn
  • 1 zucchini
  • 150 ml water
  • 1 cup chickpea flour
  • 4 tbsp. all purpose flour
  • salt & pepper
  • 2 tsp paprika
  • 1 tsp onion & garlic powder
  • coriander powder

Instructions

Cut the: broccoli, pepper, green onion and zucchini into small pieces.

In a food processor put the onion and carrots and blend them.

Combine everything into a bowl and mix them well.

Make balls and shape them into patties.

Pre heat the oven to 200oC.

Lay a tray with baking paper.

Bake them for 20-30 minutes.
