Carrot cake
Ingredients
- 2 cup orange juice, fresh
- ½ cup sunflower or (¼ olive oil – ¼ coconut oil)
- ½ cup walnuts
- ½ cup raisins
- 2 tbsp apple cider vinegar
- zest of 2 oranges
- 1 tsp baking soda
- 1 tsp baking powder
- 3 cups all purpose flour
- 7 carrots (450 g), grated
- 1 ½ cup coconut or brown sugar
- 1 tbsp cinnamon
Instructions
Place the grated carrots, sugar, cinnamon, orange zest in a bowl and mix.
Set aside and let alone until the juices from the carrot starts to show.
Then, mix in in the juice , oil, vinegar, walnuts and raisins.
In another bowl, mix and sieve the dry ingredients (baking soda, baking powder and all purpose flour.
Mix the dry with the wet ingredients and place in a mold of your liking.
Bake in a preheated oven at 160 oC for 30 minutes or until the tip of a knife comes out clean when you put it in the middle.
Let sit for 5 minutes to cool a little bit and then take it out of the mould.
Let it cool down completely and then dust with powdered sugar.
