Tiramisu

Tiramisu, this Italian dessert is actually layers of biscuits dipped in coffee and cream.

An interesting variation is this one with a lot of history behind it, that is worth trying because it includes all the flavors in the purest form.

The cream is based on tofu , which makes this dessert rich in protein and low in fat. Instead of biscuits (savoiardi) we used carob rusks which perfectly matches the the bittersweet taste of the tiramisu.

The layers finish with what else than cocoa powder!!!

Ingredients

  • For the cream:
  • 300 g firm tofu (silken)
  • 1 tsp vanilla extract
  • 4-5 tbsp. maple syrup or agave
  • 100 ml plant milk unsweetened
  • 150 ml water
  • 6 rusk crackers
  • 1 tbsp. instant coffee
  • cocoa powder

Instructions

Place ingredients into a food processor and combine until desired consistency in arrived (except water, coffee and cocoa powder).

Put the tofu cream to the bottom.

Into a bowl mix the water with the instant coffee (you can use plain or flavored such as caramel or hazelnut) and add rusks in it.

Add the rusks in the middle.

Cover with the tofu cream, again.

Store in the fridge for an hour till everything sets.

Top it with unsweetened cocoa powder.
