Red Lentil Fava

When you think of summer in Greece, the first thing that comes in mind is a table with small tasty ”meze” dishes. Fava is one of the kings in this table! A must-try tasty appetizer that can be served with almost anything!

Red Lentil Fava

Ingredients

  • 250 g red lentils
  • 400 ml hot water
  • 1 medium carrot shredded
  • 1 tbsp granulated onion
  • 2 tsp lemon juice
  • 1/2 orange peel
  • 70 ml olive oil
  • salt and pepper

Instructions

Wash the lentils very well.

In a medium pot add a little bit of the olive oil and saute the carrot until smooth.

Add the water, lentils, onion and the peel from the orange and boil for 15 minutes until the lentils soften very much. If needed, add a little bit more water.

At this point, remove the orange peel from the pot and we have two options. One is to break the lentils with a wooden spoon stiring continuously, in form of chunky cream and the other option is to blend it with a hand blender.

Mix in a bowl the blended fava, the rest of the olive oil, the lemon juice, salt and pepper and blend with a wisk or with a wooden spoon.

Serve with some extra olive oil or with some other infused oil like garlic oil etc.
