Pea soup with mint

Prepare for a soup recipe like no other , that defies the regular soup idea. This delightful twist on the classic pea soup, it’s not just for warming you up on a chilly day but also for chilling you out on hot ones !!!

Ingredients

  • 500 g peas
  • 250 ml vegan cream
  • 1 tbsp vegan butter
  • 1 handful of mint leaves
  • 1 tsp garlic powder
  • 1 lemon (juice)
  • salt & pepper to taste
  • water if needed

Instructions

Bring a pot of water to boil.

When ready place the peas in and boil for no more than 5 minutes. You need to boil the peas just to unfroze and soften a little bit.

You need to keep the peas bright colored, then immediately strain it and place it under cold water or even in an ice bath.

Place the peas and the rest of the ingredients in a blender and blend it until smooth. If needed add a little bit of water to make it velvety.

Strain it and at this point we have two options either consume it cold as an appetizer or reheat it and serve hot as a main dish.
